海藻（紅藻類）から抽出される天然多糖類。高温時に比べ低温時に粘度が高くなる。
天然発酵によって作られる多糖類バイオガムの一つ。食品のドレッシング、ソースのとろみ付けに利用。片栗粉の代用として用いられ、耐熱性が高く、冷凍食品にも耐性がある。
発酵によって得られる天然の多糖類。ゲル化剤、増粘剤、安定剤として食品に利用される。
動物の皮や骨、腱などのコラーゲンを加水分解して得られるタンパク質。
